Clean Eating and Meal Prep

Due to an unfortunately spate of food poisoning, I didn't get to any of the events that I wanted to get to this weekend (which made me really sad - I definitely wanted to check out the festivities going on all this past weekend at Woodlawn Beach, but got stuck with an IV at Mercy Hospital for a few hours instead).

This put a little bit of a damper on my usual Monday review for this week. I had to face the facts - sometimes, best intentions aside, we don't get to fitness classes, and we may not always be as active as we want to be.

However, as I work to recover my body from whatever nasty bug I had, I am reminded of the importance of clean eating - because if anything reminds you to cut excess fats and sugars from your diet, it's recovering from a stomach problem.

Right now I'm working on a diet of Cheerios (because who in Buffalo doesn't love these little oaty circles?), applesauce, and lean chicken and rice. These, along with a few other foods (bananas, plain pasta, and yogurt - because even though dairy isn't great, it is a good idea to have some probiotics) are the recommended diet for most people recovering from food poisoning, stomach "flu", etc (of course, you should ask your doctor for specifics, especially if you normally have dietary restrictions). Aside from the fact that the rice is "white," which isn't the most nutritious kind of rice, I would call this diet the epitome of "clean eating". I'm getting starch/carbs from the rice, Cheerios, and applesauce, as well as dietary fiber from the Cheerios and applesauce, and the chicken is a fantastic source of lean protein.

HOWEVER... if I have to look at another bland meal like this I am possibly going to scream. It is BORING. This is definitely not a sustainable diet. In fact, no diet is sustainable if you hate the things that you are eating, are constantly craving "no-no" foods, and the thought of your next meal makes you want to bang your head against a wall.

There are great ways to still eat clean, but avoid the bland food head-desk dilemma. Seasonings are the miracle of the kitchen. You can add pepper, thyme, rosemary, cinnamon, garlic, or any number of other spices to foods with little-to-no caloric or fat gain. Other ingredients like mustard (9 cal/Tbsp), soy sauce (9 cal/Tbsp), or balsamic vinegar (14 cal/Tbsp) can be added as a binder to hold spices onto things.

Cooking techniques must also be considered when trying to keep a dish healthy but tasty. For example, there are 120 cal/Tbsp in olive oil (considered the healthiest of cooking oils). If you pan-fry in oil, rather than baking or grilling, you could be potentially adding several hundred calories to your meal. (however, this is not just as black and white as it seems. Olive oil is considered healthy because it has only 14% saturated fat, vs a potential 92% in coconut oil and other oils. It is considered a "healthy dietary fat" because it is full of polyunsaturated fats, rather than saturated and "trans" fats - the more you know!)



Now, you might say - "I don't have time to cook every single night. And I don't work from home - how am I supposed to make this happen when I work in an office without a kitchen?" or even "I live by myself. It's difficult and expensive to cook healthy for one person".  This is where the planning and prepping aspect comes into play. If you're savvy about things, you can pre-prepare meals in one evening for the entire week. You can even get cooking done while you're doing something else, or even out of the house. Ah, the modern miracle of the slow-cooker.

For those of you that haven't heard of "meal prepping", this is something that people who want to eat healthy, but don't have the time/interest to cook regularly can do to keep themselves on track and eating healthy, home-cooked meals throughout the week. It usually involves owning a whole bunch of tupperware, collecting recipes that are good for reheating, and owning decent (read: average) kitchen appliances (I suppose it would technically be possible to do meal prep in a dorm with a mini-fridge and microwave, but it would be a gigantic pain, and would severely limit options for recipes). It also frequently entails (for me, anyways) setting aside one night per-week to cook (but theoretically, this isn't required).

I have a list of recipes that I know re-heat well in the microwave, and alongside those, I keep a shopping list of what I need to grab for that recipe. I usually do my prep on Monday nights, and do one large grocery shopping trip that same day on my way home from work. Typically I make 3 meals for the week - one in the slow cooker, one in the oven, and one that gets made on the stovetop. That way the slowcooker can cook while I do other things, and the dish in the oven can usually sit in there for 15-20mins while I work on the stovetop dish (usually the most high maintenance). Typically these dishes will include a meat (mine are usually chicken, although I have some for salmon, beef, pork, and even eggs), a vegetable (if there isn't anything in the recipe, I will include some broccoli or sweet peppers that will steam while the meal cooks in the tupperware), and a starch (my most common is rice, although couscous, quinoa, or whole-grain pasta can be used). The meals made with about 1.5-2lb of meat can be divided up into 6-8 portions, and will sit in the fridge, individually packaged and ready to be grabbed by a hungry person.

My favorite is just to do an easy marinade (this involves a little planning - putting the meat in the bag with the marinade the night before). Chicken tenderizes a little from the acidic ingredients of the marinade, gets flavor from the spices, and then will cook up nice and tender in the oven at 425 degrees Fahrenheit for 15-20 min (I cut my chicken up into pieces so that it will cook faster, and so there's no doubt if it's raw). One thing to remember - if you over cook the meat even a little bit, it will likely be pretty gross when you put it in the microwave to reheat it. Watch your times, invest in a good probe-thermometer, and for goodness sake, don't overcook your food.

Ok, so now that we've touched on the pre-prep that you can do yourself, some of your eyes have probably glazed over. Either that, or you're totally freaked out right now going "woah, no way, that's waaaayyyy too much work, and I don't have time for that.".

Well, here's the good news. I personally do the pre-prep myself to save money (and because I have a few picky-ish eaters in my household). However, there are plenty of places in WNY that will to the prep for you. All you have to do is clear out some room in your fridge, and re-heat the meals in the microwave when it's time to eat. Here's some of the local places that you can contact for delicious and healthy meal options (most have weekly pickup, and an order ahead process):


  • WTF Chef (Wellness Through Food) - based in Cheektowaga. WTF Chef is the meal prep service that taught me about meal prep. I did their service for a few weeks - it's only about $5 per meal, which is inexpensive. Some of their options can be a bit bland, but they suggest that you add your own dressings and spices to your liking. Their main focus is sugar-free meals with limited carbs (no super-processed carbs. Whole grains will be digested slower, and keep you feeling full longer). They also offer soup and salad options. 
  • Eat Rite Foods - based in Cheektowaga. Meals are about $5.50 apiece, depending on which plan you select. 
  • BBG2Go (Buffalo's Best Grill) - based in Blasdell. $5 fit meals (350-400cal). They also offer home-style food for $6/meal. They do offer gluten free and vegetarian choices. 
  • 95Nutrition - based in Grand Island. Offering general meal plans, as well as ones specified for men and women's nutrition needs, their meals are about $7 each, but with different plans, it varies (you can even add snacks in). Unlike most of the rest of the places that I looked at, 95Nutrition freezes their meals, rather than being just refrigerated (this may mean that they will last longer, and they can also be delivered farther away). 
  • Fresh n' Lean - based out of California. This is a vegan option, for those of you who are less than impressed by meat. 100% plant based and vegan, all organic. The meals work out to around $9.30 per meal ($28/day for a standard plan). I verified - they do deliver in Buffalo. 
Hopefully this is helpful - I've been bumbling my way through the food-prep world for a few months now, and while it can be confusing and time consuming, it is absolutely rewarding when you can eat fresh and healthy meals every day, and don't have to make a trip to Panera on your lunch break.

Fitness Class Review - Garage POUND at Canalside

Level of difficulty - low - very accessible

Review -

Last Wednesday, after a long day of work, and then painting a room, I decided to run (well, drive) downtown to check out one of the Canalside classes that had piqued my interest. I had already taken a few classes with Judy from Garage Fitness Studios, and knew that it would be good, and that I would definitely get a workout.

POUND is a partial-cardio, mostly strength-based fitness class that employs "weighted" drum sticks (not exactly weights, but they are heavier than a typical drum stick) called RipStix. Make sure that you do get there early for this class - I actually arrived uncharacteristically early for the class (read: about 3 minutes early), and all of the stix had already been handed out (thankfully a kind woman offered up her stix to me, saying she would do the workout without them - as with Kangoo Jumps, the equipment is a free loan during the class, but if you don't get their early enough to get boots or stix, you can still work out).




The class is set to up-beat music (dance music, hip hop, and some rock - see the Rage Against the Machine in the video below), and involves some typical strength moves. The added bit is the hits to the beat that you make with the RipStix - tapping them against the ground, or against each other with the music. Although, as I mentioned earlier, they don't add a ton of weight to your workout, they do offer an element of fun. More than that, however, they incentivize you to use proper form - getting lower into the squat to hit the ground, reaching those arms fully overhead to click the sticks together, etc.

All in all this was a rather lower-body and core focused class, with the arms being part of the movements, but not worked quite as hard (at this session, anyhow). I knew that I would be feeling it the next day, but I was honestly surprised - I was anticipating some muscle ache in my quads and glutes, but what really hit me was the hip adductors on the insides of my thighs - I honestly didn't think I had hit those muscles that hard, but I could feel a twinge each time that I walked over the next 2-ish days.

The one thing that I didn't know coming into this one was to bring a yoga mat.  This class does incorporate ground work for core, glutes, etc, and you will be uncomfortable if you don't have a mat to sit/plank position on (if it was grass down there, it wouldn't be that bad, but much of the grass is worn away and there a lots of small rocks... not pleasant). Thankfully I lucked out and a kind neighbor offered to share her mat with me =]

Despite the very extreme heat and humidity that day, this class was fun, I enjoyed moving to the beat of the music, and it is a very accessible class for beginners. Yet another excellent Garage fitness class that I would recommend people take if given the chance.

Stay active together - Summer edition



During any season in Buffalo NY, you can find plenty of ways to get moving. If you're like me, you go out to a lot of these by yourself - it's a great way to make new friends and to get involved in the community. 

If you are really lucky, though, you have a significant other who enjoys doing these sort of activities too! Why go to dinner, when you have have an active date, exploring western NY and getting moving?

Let's explore some ideas for dates that involve fitness-like activities that can be performed as a couple:


  • Hiking - this is a really inexpensive way to get active together - all it takes is a waterbottle and some sturdy shoes. Believe it or not, there are a lot of places locally that are beautiful to hike through. Places like Tifft Nature Preserve, the Outer Harbor trails, Gratwick Park, and Chestnut Ridge are just minutes from the city of Buffalo, and have miles of trails and lots of new things to see. Looking for some hiking buddies? Make friends with the Foothills Trail Club on facebook. They have usually at least 4-5 hikes per week, if not more, and it's a great way to find likeminded people who enjoy exploring nearby parks and trails. Or, if you're looking to do some more urban exploring and to learn about WNY, check out Explore Buffalo - it does cost some money, but they have tons of options for local tours with a tourguide to tell you about what you are seeing. 

  • Sailing - if you've never been sailing before, I highly recommend it - it is a blast. I also recommend taking a lesson to learn at least the basics, because there's a lot of ways you can get into trouble pretty quickly (I've flipped my fair share of small boats). For the environmentally friendly couple, this activity has appeal due to the relatively small carbon footprint (compared to speed boats or jetskis). For the active couple, this is a great sport - believe it or not, sailing can be as leisurely, or as active as you want to make it (also, depending on the wind on the day that you choose to go out). For the thrill seekers, you can definitely catch a stiff breeze, throw out that spinnaker (a large sail that catches a lot of wind), and get some serious speed going.   • Jetski-ing - if you're looking for something with a motor, you can rent jetskis together from Waikiki Watercraft in Grand Island. You can each get your own, or you can get a two-seater if you want to stay cozy. 
  • Beach volleyball, softball or soccer - another option to get some activity together is to join a co-ed team together. There are lots of options for beer leagues in the area for softball. Volleyball has leagues at Holiday Sports bar, as well as other bars in the area (check out http://www.buffalovolleyball.net/ for more information).   • Tennis doubles - find a set of partners and head to your nearest court for a game of doubles. Check out this site for a list of local courts. 
  • Pickleball - This is a very popular new sport that relatively recently hit the Buffalo area. Pickleball is similar to tennis, in that there is a net, a ball, and  you hit the ball over the net - however, it uses something like large ping-pong paddles and a whiffleball. You can play at Buffalo Riverworks, as well as several times per week at the East Aurora Healthy Zone Rink. More information about local pickleball is available here.

  • Marathon/Triathalon/Ironman or woman training - For those looking for more hardcore fitness together, you could be training partners with a specific race as your goal. Training together is a great way to stay motivated, and to spend time together. There is a local Triathlon club, as well as numerous gyms in the area that will help you set up training programs.
  • Acroyoga - if you're a yoga junkie and looking to take your practice to the next level, grab your significant other and head to an acroyoga jam. This activity will test your balance, core strength, and your trust in one another as you lift and balance and fly. Fitness Class Review - Kangoo Jumps at Canalside



Class name - Kangoo Jumps by Garage Fitness Studio (Monday nights, email ahead to reserve boots)

Level of difficulty - Requires balance and some core strength

Review -

As part of the growing free summer fitness program at Canalside, Garage Fitness Studios has been able to bring several unique offerings to the citizens of Buffalo. Two of the classes, Garage ROCKS (Wednesdays) and Kettlebell Swingin (Sunday mornings) I have not yet had the pleasure to check out (maybe this week?), but two weeks ago I went downtown on Monday evening to check out Kangoo Jumps.


Kangoo Jumps is an extremely active, very aerobic fitness class that is taught, as many classes are now, to music (similar to music used in a hip hop or Zumba class in this case). This is one of the few classes downtown that does require special equipment other than something simple like a yoga mat, but as with kettlebell swinging and hoop dance, the equipment is provided at no charge to the participant (which, in this author's opinion, is amazing). This class requires springy boots - bouncy, like moon boots, but much more streamlined. Picture a ski boot with a flexible blade on the bottom (with rubber so that it doesn't slip) that allows you to bounce with every step or jump that you take.



As with many of the classes I have done this summer, I went in with no experience, and some trepidation that it may be difficult, and I may not catch on. In this instance, I was concerned that I was either going to break my ankle, or slip and fall and cut my legs up. This was not at all the case - the boots are very stable, and even though they come in somewhat "generic" sizes (small, med, large, etc to accommodate a range of shoe sizes), the adjustable buckles allow you to gt a tight fit around both the instep and the ankle. The class itself was completely doable for a beginner - when I first stood up on the boots, I was concerned about tipping over, but the more I moved, the more stable I felt. The moves that they teach lend themselves naturally to using the movement of the boots. 

Judy Siniscalchi is the instructor of the Kangoo Jumps class (along with other classes, as the owner of Garage Fitness). Although she had recently broken her toe and was not in boots that day (I was actually borrowing her boots), she was still actively teaching the class. As with many of the outdoor classes, she was mic'd and had loudspeakers with the music, and with her instruction coming through them. Before each song she would teach an abbreviated version of the moves so that you knew what was coming up during the song and could prepare. She also made sure that, as a new person, I was in the front near the instructor (no pressure, haha). 

Judy discovered Kangoo in 2015 and began teaching the class shortly after that. She also teaches many other classes, including Kettlebell Swing, Shadow Hoop, and Pound (a class with drum-stick-like equipment) - you can see a full list of Garage's classes here

The class itself was a lot of fun - the music was upbeat and kept you moving, and the movements, while challenging, were doable. This activity is friendly for all ages - there were even 4 younger pre-teen girls right up front, jumping along with the instructor (they specifically requested a song that they call the "Judy Booty" song, which is murder on your glutes). It was definitely a hot day, but there was a breeze coming off of the lake, and there was a fountain nearby that sprayed mist - this was a lifesaver. 

Come prepared to sweat - this class, like the zumba class, is a constant mover with different songs that target specific ares of the body. While there is a little arm-work here and there, this is definitely a core and lower-body intense class (while it didn't burn my legs out entirely, I was feeling it the next morning). I would definitely recommend wearing taller socks that cover your ankles, up to the tops of the boots - one of the boots rubbed a little bit and I had a "rug burn" on my leg in that spot for a few days, so the next time I will come prepared. Also, if you are a glasses wearer, I would very much recommend contacts for this one if you have them - my glasses were bouncing all over and I was constantly pushing them back up the bridge of my nose #thestruggleisreal (things you don't think about until they happen). Finally, don't forget a waterbottle (yes, I totally left my waterbottle in my car, and it was 90 degrees out, and I was at a fitness class... I was woefully unprepared for this one). 

All in all, this was a really fun class, and I will definitely do it again - this time with stripey knee socks.
